My friend Maggie just turned 23 and we celebrated this weekend so I made her some yummy carrot cupcakes to enjoy! I got the recipe from my best friend, Kait, who found it in Better Homes and Gardens. The secret ingredient... Pineapple! Sounds weird, but it's incredibly good:
Better Homes and Gardens Carrot-Pineapple Cake
1 1/2 cups sifted all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2/3 cup oil (canola or veg)
2 eggs
1 cup finely shredded carrot
1/2 cup crushed pineapple (with syrup from can)
1 teaspoon vanilla
Sift together into large mixing bowl: flour, sugar, baking powder, baking soda, cinnamon, and salt. Add oil, eggs, shredded carrot, crushed pineapple, and vanilla. Mix until moistened; beat 2 minutes at medium speed on electric mixer. Bake in greased and lighting floured 9x9x2-inch pan at 350 degrees for about 35 minutes or until done.
Or to make cupcakes just evenly distribute batter into muffin tins. makes between 16-24 cupcakes depending on how much batter you use. Bake at 350 degrees for 18-20 minutes.
Cream Cheese Frosting
1 3 oz. package cream cheese, softened
1 tablespoon butter, softened
1 teaspoon vanilla
2 cups powdered confectioners' sugar
Combine cream cheese, butter, and vanilla. Beat at low speed on electric mixer until light. Graduatlly add sugar, beating until fluffy. If necessary add milk (one teaspoon at a time) to make of spreading consistency.
It was so much fun to make them and Maggie was super surprised to find them ready for her to blow out and make a wish. It was definitely a fun weekend :)
